What do you do with leftover chicken?

Help spark my creativity!

DH is completely in love with the Nigella Lawson Roast Chicken Recipe. Which is fantastic, but he wants to eat Roast Chicken like once a week and since we never finish a whole chicken, I perpetually have chicken remains in the fridge and am running out of creative ideas on how to use them up!

We're utterly tired of: Chicken Enchilladas, Chicken noodle/Chicken Rice soup and Chicken Salad Sandwitches.

There HAS to be something else I can do with these chickens!

I typed in leftover chicken at allrecipes.com and it came up with a ton of ideas. I bet you could find something tempting.

Cooked chicken also freezes well, and then you can thaw it later for quick meals. My brother likes to keep slices of grilled chicken breast in the freezer, and he microwaves them frozen. Then, he tosses them in salads and adds Caesar dressing.

Just some other ideas for using up the chicken. I don't have the recipes close by, but I'm sure you could Google them.

When we have leftovers we have teriyaki chicken (sauce is so easy - soy sauce, brown sugar, a bit of ginger, garlic, and cayenne), bbq chicken, or chicken fajitas. Then we often make chicken noodle soup.

We use leftover chicken in homemade chili too (shredded). You could make a chicken casserole too. Egg noodles, mushrooms, peas, parm cheese, white cream sauce and chicken! I make something similiar using brown rice.

I like the freezing idea too. You can freeze the chicken or the chicken soup/broth for use in cooking.

We LOVE chicken pot pie. Look up a basic pastry recipe for the crust. Steam carrots, celery and onion. Make a gravy to pour over veggies and raw mushrooms, and cover with more pastry.

when i have leftover chicken or beef i make 'fried rice'...i just fry up some veggies (like peas, carrots, mushrooms, whatever u have), add the leftover meat/chicken, then add day-old rice, fry it up a bit, and add soy sauce and then fry some eggs on the side and add them to the mix....

dh loves it and i dont have to 'cook'
