Half-tomatoes are a bugaboo at our house: I'm the only one who eats fresh tomatoes, and one is always too big for a sandwich or burger and the leftover ends up having a lonely demise in the fridge. I'm so proud of myself: In the past week I've used up not 1, but 2 half-tomatoes by chopping them into the same foods I chop raw onion or chives into. I found out baked sweet potato with butter, pepper, red onion & raw tomato is delicious and so is reheated lentils & rice with cheddar cheese, scallion & raw tomato! (Kinda wish I had another tomato for a second serving of those lentils & rice, to tell the truth
)
This is great because I didin't have very many ways to eat raw tomatoes from my garden in the summer, either. I can only eat so many sandwiches, KWIM? Even bacon, mayo & tomato ones.
We get a fair amount of bread-heels too, either storebought or homemade, and dry pathetic 3-day-old corn muffins. I learned to freeze these in a bag, make stuffing with them when there was enough and absolutely knock my MIL's socks off
What's your "usual suspect" leftover and how do you make it come out even (and yummy)?
