poddi, if you add more powdered milk ( or use milk instead of water) you will get a much softer crust.

I have a breadmaker and a bowl. I REALLY prefer the bowl and spoon. I like how the bread's texture and flavor turns out better. I make one loaf at a time or two. I also have been baking four times or more a week. I have been playing with sourdough and my family devours it. However, my daughter still prefers what we call the "daily" bread for her decadent grilled cheese sandwiches.

Thanks ladies for all of the great tips! I do have a great kitchenaid mixer (got it for our wedding) and I'm sure it is greatly underused! I do have a bread hook (is that what it's called) but I haven't used it. I will have to find it and try it out. I will have to check out that Laurel's kitchen bread book- it sounds great!

What is proofing??

You are all so enthusiastic about your bread making!! I love it!
