Whole grains that are not soaked first are hard to digest and contain phytates which impair digestion.

I think this could be one cause of the massive increase in food allergies. What do you think?

I agree... I just got the Nourishing Traditions cookbook that this excerpt was taken from and I'm looking forward to investigating more!
