Any good recipes out there for a yummy dairy & gluten free bread?

Haven't tried this sourdough starter yet, but here you go http://www.redstaryeast.com/r_sourstarter.html. It is typically easy to find a bread recipe to use this starter. If you try it please post and tell us how it worked out

There are many Usenet groups that are helpful for finding special recipes. Do a search on http://groups.google.com and see what the archives have to offer you.

Can it be a sweet bread? I make a yummy banana bread and also apple/pear bread. Generally, I find a recipe and just substitute brown rice flour for the wheat flour.

I am trying to find recipes that incorporate possibly quinoa, amaranth or buckwheat flours. I know they all say to use a 50% ratio with wheat flour, maybe I can substitue Spelt for the wheat. I woud like to make something that is as nurtitious as possible and I don't care for the texture of rice flour. Does anyone know what would happen if I were to use %100 buckwheat or qunioa flour? Did I forget to mention I'd like it to be yeast free too? I know this is a tough one!

Spelt has gluten too so it might not be a better substitute.

Traditional sourdough does not use yeast, but it takes quite a long time to mature.
