Great Vegan Coco cake recipe

1/3 cup pure maple syrup
3/4 cup vanilla soy milk ( NOT low fat)
1/4 cup canola Oil
1 teaspoon vanilla
1 teaspoon apple cider vinager
1/3 cup sifted unsweetend coco
1 cup whole wheat pastry flour
1/2 teaspoon baking powder
Raspberries, cherries, stawberries or blueberries for topping

Preheat to 350....

With mixer, mix first six items. Make sure they are mixed together well. Sift together flour, baking soda and baking powder. Add to coco mix. Pour into 8 inch greasedcake pan. Cook 20 minutes. until fork comes out clean!!!
Top with any berries or with soy ice cream or both ... THE BEST...

Great for kids Birthday CAkes!!!

Where's the baking soda?!

Granolamom,

this is urgent! I was going to bake the cake for kiddies tonight, but when I went through the ingreds again, I found there was no baking soda!! But the instructions said to sift flour, BAKING SODA, and baking powder..... so what's the right amt??
Pls let me know asap, thanks!!!

Dearest Granolamama--Do you have any thoughts on whether or not this would work well baked in a pan of six star-shaped mini-bundt cakes? Like muffin sized individual bundt cakes? Sounds yummy...Thank you!!!!
