Can you substitute spelt/rye/soy flour for wheat/white???

Can you substitute spelt/rye/soy flour for wheat/white in baking one for one? Or do you have to do anything special to it? I want to make cinnamon rolls but can't use whear flour for some of the family. Any thoughts?

You'd have to add gluten if you didn't use white or wheat flour. I've never done it, so I can't give you any further information about the amounts or anything. There are lots of people who can't handle wheat, so there are probably websites with some recipes you could try.

wheat flour substitute

I use 2/3 Oat Flour and 1/3 Rice Flour per 1 Cup Wheat Flour in all Baking Recipes

soy flour

Use 1/4 soy flour and 3/4 wheat/white flour.

I usually use 3/4 spelt flour w/ 1/4 cup soy flour for each cup wheat or white flour that is called for.
I've also used tritacale flour in place of wheat flour w/ great success!

I just use spelt 1:1 in place of wheat. Works for us!

I use spelt in place of wheat. It still contains gluten but I cannot tolerate it more than wheat flour. VitaSpelt is the brand I buy.
