It does make about 8 cups so depending on what you are using it for, and how many you are feeding, you may want to cut the recipe. Sometimes we'll cook a lot and jar it in the fridge (but with an italian hubby we can go through it in a week or less so I don't know how well it would keep, as we've never had it around long enough) but it's fast enough that you can make a batch at dinnertime--which we sometimes do if we want to make a specialty sauce, just make up a 1/4 batch, but sometimes we just jazz up some of the basic stuff as we are warming it up. And while we've had better, this is a great weeknight sauce that doesn't take hours of simmering and it's not shabby at all.
