Okay MDCers...what do you do with the Thanksgiving day leftovers? Casseroles? Sandwiches? Pot pies? Flaming Turkey Wings?
We make 3 standard "leftover" poultry casseroles.....Broccoli and Turkey Casserole, Pot Pie, and Turkey Enchaladas. We also make a potato and cheese casserole...sort of like twice baked mashed potatoes.
What do you think? A leftover recipe swap? I will post mine if anyone is interested I would love to get some ideas for using the leftovers up!!!

I make yummy turkey chili. I will post it in the next few days.

I'd love to get your enchilada, broccoli/turkey and potato/cheese casserole recipes.

:LOL
I can look online for you if you want Lisa! he he he sorry to dissapoint you

The turkey/broccoli casserole is so simple I can type it from memory. It's one of those not really good for you 50's soup things

One can cream of mushroom soup
One can cream of Chicken soup ( I often use leftover gravy instead)
2 tblspns lemon juice
bread crumbs
cheddar cheese (or other....also good with colby and swiss)
pepper to taste
10 oz broccoli steamed and chopped...or left over
1/4 c mayo (I leave this out if I use more gravy)
shredded turkey

put the broccoli in a casserole dish. put turkey on top. mix soups, lemon juice and mayo, pour on the turkey. add pepper if you want. top with cheese, sprinkle with brad crumbs. Bake in a medium oven until bubbly. Serve over rice or noodles.

I will post the enchilada and potato one soon too!
