Is anyone else the lone vegetarian of the house? How do you do it? I am the only one and so I have to prepare mini meals for myself which is getting tiring. My husband is the one that does the major amount of the meal prep for the kids because of my schooling and he is adamant that he will not give up meat, so he usually cooks something with flesh and when I get home from school or studyingI am left to fend for myself basically which is usually something quick and easy but i think that I am probably shorting myself nutrition ...Any better suggestions?
