I guess you might not want zuccini bread? I make that and give them out.
Freeze a few batches in serving sizes you would need them- but I too have zuccinni coming out of my ears along with cucumbers, and soon to be tomatoes!
Saute it in some evoo with garlic, salt and pepper. You can even add curry powder to it. If you want it softer add a little water, turn down the heat and let it cook for a couple minutes. It doesn't need much cooking.
Mix equal amounts of grated (shredded?) zucchini, onion, carrot and potato - squeeze out all the excess liquid. Add an egg and flour until they combine well and make into pattie sizes. Lightly cook in a little oil (about 6mins). Yum, my DS loves these.
