I guess you might not want zuccini bread? I make that and give them out.
Freeze a few batches in serving sizes you would need them- but I too have zuccinni coming out of my ears along with cucumbers, and soon to be tomatoes!

what abt zucchini fritatas? Give me a bit and I'll get the recipie. SUPER easy. I love easy recipies. and you can do spinach too.

Saute it in some evoo with garlic, salt and pepper. You can even add curry powder to it. If you want it softer add a little water, turn down the heat and let it cook for a couple minutes. It doesn't need much cooking.

Mix equal amounts of grated (shredded?) zucchini, onion, carrot and potato - squeeze out all the excess liquid. Add an egg and flour until they combine well and make into pattie sizes. Lightly cook in a little oil (about 6mins). Yum, my DS loves these.

I made pancakes with it -- shredded zucchini, feta cheese, flour, salt and pepper, fried in some butter and dipped in applesauce when done.

Sorry I don't know amounts, I played with it awhile until it looked right.

I feel your pain. I just froze a zillion bags of shredded zuke. My countertops are still covered with whole zukes!

I saute it in olive oil and add fresh herbs. For some reason my kids will eat it this way, but they hate it sliced and sauteed.

If you eat meat, you can incorporate some (squeeze well) into meatloaf or meatballs.

I second the fritatta suggestion. I like mine served with salsa.
