I've used previously frozen meat before and refroze it again in a recipe with no ill-effects. Often, I buy ground hamburger and freeze in 1 lb portions. Later, when I make spegetti or another dish containing ground hamburger, I will freeze a portion. Sometimes there is a bit of texture change, but not really that noticable. The only time I've had a problem was when I made burgers from frozen meat, didn't use all of them, and refroze and tried to use them again after another freezing...not a good idea. In my defense, I was a new wife at the time! Happy cooking!
