homemade veggie burger recipies?

anyone have a good recipe for homemade veggie burgers? ideally i am looking for something with beans, maybe rice and nuts... no tofu though, and a little bit of cheese would be ok, but not as a substantial ingredient.

i'd like to make up a bunch and freeze for lunches.

1.25 C. split peas
3 C. water
1 egg
1 Tbsp. lemon juice
.5 C. chopped onion
.5 tsp. thyme
1.5 tsp. parsley flakes
.5 tsp. soy sauce
1 tsp. gravy browner (I leave this out)
1 tsp. salt
.25 tsp. pepper
1 C. cooked brown rice
.25 C. flour
1.5 C. dry bread crumbs

Cook peas until tender. Drain. Mix everything else in blender first, then add peas and blend well. Put in bowl and add flour and bread crumbs. Stir a little. Let it sit about 10-15 mins. Shape into patties, dip in flour to coat, and fry 'em up. Yummy!

(I'm not sure how they freeze.)

Bean Burgers:

1/4 cup sunflower seeds
2 cups red or pink canned beans
1/2 cup minced onion
1/2 tsp. chili powder
2 tbsp. ketchup
1 tbsp. wheat germ or oatmeal

Chop the seeds up first. Mix in the remaining ingredients and form patties. Bake at 350 for 20-25 minutes. Remove from oven and let cool until you can pick up each patty to smoosh and reform it firmly in your hands. Then cook for another 15 minutes on each side.

Then you can wrap individually and freeze. I like this recipe because it has just a few ingredients. You could always use fresh beans you have cooked. Hope you like this one!

Barley-Mushroom Burgers

½ cup quick cooking barley
1 egg
1 cup ricotta cheese
1 cup shredded cheddar cheese
1 cup minced mushrooms
½ cup breadcrumbs
¼ cup parsley

Mix all ingredients together, make into patty shapes, and then cook in a hot skillet with a bit of oil. Serves 6

Find a Falafel recipe and omit some of the spicey spices.

Savory Bean Burgers

2 cups cooked beans - kidney, red, black beans
1 cup rolled oats - old fashioned style
1 medium onion grated
1 stalk celery, finely chopped
3 cloves garlic, crushed
1tsp. sage or basil
1tsp. thyme (no more)
1tsp. dijon mustard
salt and pepper to taste

Saute onion and garlic. Partially crush beans.
Mush everything together in a bowl with your hands.
Form into small patties.
Saute the patties in a little olive oil on both sides till brown; about 5 minutes per side.

Makes 4 good-size burgers

question for abac


I have a question about the 3 C water. Is that what you cook the split peas in or is that part of the ingredients put in the blender? Actually, I have a second question. How long should I expect to cook the split peas before they're soft?

RecipeZaar has a bunch of veggie burger recipes that sound tasty, but I haven't had a chance to test any yet.
