Just thought it would be nice to check in and here about what yummy things you all are cooking this summer. I have been reading the China Study. I am about a third of the way through the book, and wow... I would be interested in discussing this book further with those that have read it.

Happy August fellow Veg Mamas. We're loving the bounty of my grandmothers' garden right now. My ds is LIVING on strawberries from last month and raspberries/blueberries this month. He LOVES to eat the berries over a good dollop of marscapone cheese sprinkled w/ vanilla sugar. mmmmmmmmmmmmmmm. Tonight for dinner I made a swiss chard & onion fritatta and a big green salad. also, mmmmmmmmmmmmmmmmmmmm. And we had coconut milk rice pudding for dessert. mm mmm mmmmmmmmmm. On a very bright note, after being devastated by losing our rabbit (she died) fate has stepped in and we may have another house bunny before to long. Our new neighbors have friends that also live here but who are moving over seas for 3 years to rebuild/doctor a 3rd wrld country and they have a house bunny they were going to give to the shelter (isn't it a bit of an oxymoron to do that? Considering their mission? : ). So, we're going to go meet them and bunny tomorrow.

Hi all. Loving all the fruits and veg that summer brings us. Just signed up for a CSA and got our first lovely box last week. I love it.
I've been doing eat to live the past two weeks, it is a way of eating/diet thing. Really interesting....and vegan! I've been eating more fruit and veg every day than sometimes I used to in a whole week.

I almost started an Aug thread the other day but didn't have time.

We're really digging the farmer's market. The difference in quality and price is amazing from even fancy stores like Whole Foods. I gave this example on the "Poor people could eat organic..." thread: A few weeks ago (prices have gone down a bit now) Heirloom tomatoes were $7.99/lb at WFs. EIGHT BUCKS A POUND!!!! But at the farmer's market, it was about 2-2.50 and since we were there late, it was almost closing time and before I'd bought any, it went down to $1.50!

What's vanilla sugar? Do you buy it or is it something you make yourself? Sorry if that's a stupid question but I've never seen that in my store and it sounds so good!

It sounds like everyone's enjoying the bounty of Summer & the joy of Farmer's Markets! We go to ours every Thursday, and one of our favorite stops is at the Organic grains stand ~ the guy is so friendly, and we get the most amazing 7-grain cereal!

Oooh, I just saw a Naked Chef episode where he made vanilla sugar! He basically took a couple of pods of vanilla, whirred it up in the food processor with regular sugar, and then sieved it. It was a lovely, pale brown color and looked divine!

Hi- I am new to this thread, so I hope you don't mind me jumping right in. We also are enjoying the bounty of summer. Our CSA has been having a hard time this year because of weird spring weather, so we just got our first full box last week. Up until this week, we have had lots of wonderful greens- which DS and I love, but DH and DD are a bit tired of them. Now I am getting really creative! Our backyard garden isn’t going as well as it could be- we just moved into this house in January, so it is our first summer- and the yard doesn’t get enough light to produce a great garden. We are getting a little zucchini, some pole beans, some strawberries, some herbs, and the tomatoes should be turning red any day now. The weather really has been weird because this is really late for tomatoes to be starting.

I made a great salad the other day with lentils, quinoa, beet greens, radishes, cucumber, carrots, and assorted herbs. It was a use up a bunch of odds and ends type of creation and it turned out so good. Unfortunately, it is not repeatable! I hate it when that happens.

hi everyone. I missed last month's thread being busy with my new baby, but am glad to be back on this thread. I've been going to the farmers' market in addition to receiving a box of organic produce bi-weekly from a delivery service. I am enjoying fruit salads regularly. Also been making lots of bread, as it's the season for that.

What have you all been cooking lately? I've been using tons of veggies, adding them to anything I can think of. I've got some veggie stew in the cp right now. Planning on making borscht later this week along with some bean soup. I guess I'm making soups this week. :LOL
Dh is going back to school soon, so there will be more kid dinner nights. Summertime is cooking time for us, since we're both home most evenings. I love it.
We've been eating tons of tomatoes. We got some beautiful organic heirlooms last week and there was a huge one that I was waiting to eat (why? I ask myself) and of course it went off
I think dd must be on a growing spurt because she's actually been eating lately! Hurrah! Sometimes I wonder how she can make it through the day with eating so little, but I know she'll eat when she's hungry. She's been eating cashews by the bowlful.

Take a vanilla bean and split it down the middle. Scrape out the soft inners and throw that, along with the outer bean, into a container of sugar... it becomes so yummy!

i'd like to join this tread!

we've been trying not to cook too much because of the heat, but we've been having lots of yummy steamed greens from our CSA. we also recently had rattlesnake beans (that's what someone else called them) which are green and purple beans which i sauteed up with garlic and they turned totally green and delicious!

our own garden has been suffering terrible neglect both from us and from a dry summer. but we do have one beautiful and determined cucumber plant that has been giving us really wonderful cucumbers all summer.

Hey everybody - I've been really enjoying the farmer's market too since we don't have a garden this year.

Here's a really easy dinner I made tonight - I didn't have much in the house because we just got back from a trip - but it came out so good.

Cooked up some pasta and tossed the hot pasta with a can of kidney beans, chopped fresh herbs (parsley, sage, thyme, rosemark, chives), olive oil, salt and pepper. We sprinkled with parmesan at the table. The kids really chowed down on it!

Hi mamas! I have been relying on my old "stand-by's" the past couple of weeks...
stir fry with veggies and tofu
lentil and potato/ tomato shepherd's pie last night and tonight i am thinking veggie and black bean quesadillas, using the rest of the black beans i cooked last week and froze and the nice zukes and yellow squash that I have on hand.

I hope to head to our farmer's market tomorrow, I have heard that they have "rainbow" lentils there...have never seen this variety?


This may be way OT, but I was wondering, for those who eat pre-made veggie burgers, what kind/ brand do you buy?

I always like to keep a box in the freezer for a quick snack, dinner, etc. and I usually stick to Boca, but after doing a little "research," I have found that they use genetically altered soybeans ,
I guess that I should not be surprised but I feel a little disillusioned - should have done my homework years ago I guess......anyways, anyone have a favorite premade veggie burger?

hey cathe, i love your banana molasses muffins and have a quick question.. my son's school (in the fall) is nut free.. do you think i could use sunflower seeds in place of the almonds, or would that really alter the taste?

Can I have the source for where you read this? That truly sucks becauce they are the only ones at our gorcery store that you can get vegan. Damn, does anyone know of a cheap brand of vegan burgers that isn't Boca, which I hate to buy anyway because isn't it a Kraft food which would totally explain the GMO beans. :

We made some very delicious vegan chocolate ice cream last week. It was a real treat!!!!
Figs were on sale this week and we got two containers of them, yum!!!! We have been eating a lot of hummus with tons of fresh veggies to dip.

My kids really like the Amy's brand of veggie burgers when I've bought them. I think it was the California burger and I beleive it's vegan. You'd have to double check.
