I know I can take a sweater and turn it into a diaper but could knit/crochet yardage and use that as I would fabric To make dresses and such? I can put togeather clothers and things with fabric without needing a pattern...I just have that thing in my brain where I can see how things go togeather but I can't really crochet shapes...just bad at it.

I think what you are asking is - could I knit or crothet a flat square and then cut it and sew it together like fabric? The answer is YES, but most people don't do it because it wastes the extra pieces you knit. I'd suggest getting some books that demonstrate basic crotchet or knitted patterns and work up a few. Eventually you will get the hang of how to crotchet/knit 3 dimensional shapes. Many patterns for knit/crothet simply mimic patterns for cloth - eg: set-in sleeves that need to be sewn to fronts and backs.

You can also crotchet to a paper pattern. Just lay the pattern down and crotchet to that shape.
