So, what's on everyone's menu for this week?

I'm looking for meal ideas and was wondering what everyone is having this week.

Here's what I've got loosely scheduled for us :

(breakfast is the same most mornings, so I just have lunches and dinner planned)


Dinners for this week :

Pasta w/ homemade tomato sauce and cut up chicken, topped w/ mozzarella (w/ steamed vegetables and homemade bread)

Homemade Pizza (w/ steamed veggies)

Marinated Chicken (w/ baked potatoes and homemade mac and cheese)

Quesadillas (w/ veggie fried rice)

Parmesan Chicken (w/ steamed veggies and bread)


Lunches (these are only loosely planned, so I just have several things on hand I can make and decide what to make on that day) :

Rice A Roni (DS loves this)

Grilled Cheese (I use Sara Lee wheat bread - there is a certain kind that has 4 grams of fiver per slice )

Homemade macaroni and cheese

Beef Enchilada Casserole (has beans and corn and lots of tasty stuff)

Turkey Meatloaf, Mashed Potatoes and Fresh Green Beans
Home made Pizza
Shrimp and (turkey) sausage jambalaya
chicken and Pasta salad
7 bean soup and cornbread

Lunch is usually leftovers, Veggie Burgers, p'nut butter sandwiches or something equally easy...

I only plan dinners. My toddler and I only get to snack during the day so I don't plan breakfast or lunches.
Tonight: Sweet and Sour green beans, whole wheat rolls
Tuesday: Homemade mac and cheese, grilled ham slices (my toddler loves ham)
Wed: sauteed squash and zucc., roasted chicken and whole wheat rolls
Thurs: meatloaf muffins, roasted corn on the cob
Fri: spaghetti, salad, bread
Satur: something with eggplant
Sun: beef stew and biscuits

Tonight: Gai Gra Pao (takes lots of fresh basil from our yard...) on rice with green beans
Tomorrow: Sauted pork chops in salsa and black beans, with pasta and broccoli
Some night it's not raining Katrina: Burgers with more green beans
Some night it is raining: Meal in a bowl potato salad with more green beans.
Friday night: leftovers

Can you tell our green beans are in?

For this week:
Linguine with garlic, basil, tomatoes, and balsamic
Orzo with spinach, cucumbers, red onions, tomatoes, olives and feta. Serving with a mushroom and cumin saute.
Spinach and lentil stew in the cp served with mashed carrot and potato salad with harissa.
Red beans with corn and some rice cakes.
Stir fried tofu and tortillas with cream cheese.
Also planning on making some pb balls, banana ginger muffins, and tahini dressing.

Dinners are planned, lunches are leftovers or sandwiches. I usually make a soup of the week but with travelling this weekend, I'm not going to -

Sunday - Chicken Tikki Masala (with spinach, chick peas, carrots & onion), brown rice, shredded zucchini, salad

Monday - turkey meatloaf, mashed potatoes, beet greens, roasted beets, fresh tomatoes

Tuesday - (school night for me) - tuna cassarole (with egg noodles, peas, onions), salad

Wednesday - pork chops, homemade mac & cheese, broccoli

Thursday - grilled BBQ chicken, corn on the cob, quinoa & black bean salad

Friday - travelling - sandwich for DS in the car, and we'll stop halfway to eat on the way up.

Saturday - away - MIL will cook!

Red Lentil Soup in the cp with bbq tempeh
Vegetable Soup
Annie's macaroni and cheese with a fruit and nut plate
Gnocchi with tomato sauce
Herb Salad with Creamy Vegan Soup
Black Eyed Peas in the cp with garlic stewed tomatoes and green beans
Pinto beans with spinach and rice
Brekkie for dinner (cereal, etc.)
Edamame, hummus, pita, and veggies

I'm trying to plan meals more, lunches are pretty planned out since I pack DS's. Supper has been lentils, lentils, and lentils lately. But I'm not complaining This week I made a red lentil/carrot/orange soup, a yellow lentil and veggie stew, and tonight I made a morrocan eggplant stew/soup with red lentils. I just got a bag of brown lentils too that I'm going to cook up as soon as I've finished all the leftovers I already have! :LOL I've missed soup I guess, I ate it everyday last winter.

I usually just write down all the stuff I plan to make for the week (on Monday) and choose from the list each day. Once a dish is made I cross it off.

What's remaining on the list for this week is:
Cucumber salad
Mixed salad
Fried eggplants
Raw veggies with dip
Roasted broccoli
Sauteed squash and fennel
Steamed beets and potatoes
Tortellini
Grilled salmon
Chicken nuggets

You can probably tell I don't make anything fancy at all. All simple food. I myself love the natural taste of food and don't use much condiments at all.

Tuesday - Big salads with added veggies on top and garlic bread
Wednesday - Impossible Cheeseburger Pie
Thursday - Soup and sandwhiches
Friday - Pizza cassarole

I decided yesterday to start planning only 4 dinners a week, since we end up doing unexpected potluck dinners with friends so often and then have food going uneaten in our frig. This week, because it's Labor Day and I expect we'll have a lot of picnic leftovers, I'm only planning 3 meals and budgeting for an extra small trip to the store if we need it.

quinoa in a vegetable broth with diced tomatoes, onion, celery, kale, and thyme

rice and beans with tomatoes, peppers, olives, chipotle peppers, onion, and garlic

kaluski -- a Polish dish of cabbage, onion, and egg noodles sauted in butter

Each of those makes a lot of leftovers for lunch; I'll probably do the first in spinach wraps with cheese, raw shredded kale, and shredded carrots; and the second in tortillas with lettuce, cheese, fresh tomatoes, and sour cream.

Like WOW!

I have heard of people planning meals but I have not ever really seen it in action. My family of orgin just always winged it. Now with three kids I have thought about meal planning but had no idea where to start. Usually I just look through the fridge and my csa box and whip something up.

Bravo to ladies! I want to eat at alll of your houses!

Is there any links or good threads about where to start or other suggestions?

I am sooo inspired! Thank you. Maybe next week I'll post my first pre=planned menu!

Tonight we had roasted green and orange peppers stuffed with black beans, brown rice, cheese, and salsa. Here's the rest of the week:
Sunday-Tomato basil squares
Monday- Hot Dogs (it's Labor Day so it's OK to be unhealthy, right?)
Tuesday-Black beans and rice cakes (with leftovers from Sat)
Wednesday- potluck at church I'm bringing corn pudding
Thursday-butternut and lentil bisque that I made last week and froze
I only plan main dishes and use whatever fresh veggies I have on had. This week we have broccoli, kale, green beans, squash, corn, peas, and tomatoes. I grocery shop on Thursdays so I plan meals from Friday- the next Thursday based on what's on sale.

Tonight we are having barley risotto with kale and parmesean. I added ham to dh's
The rest of this week Ill fix the following in no particular order.

calzones
veggie stir fry with brown fried rice
potato soup with kale and other veggies in it home made bread
leftover frozen lasagna and salad
homemade pizza with lots of veggie toppings

For breakfast I have eggs and oatmeal.
Lunch will be leftovers or sandwiches or salads

We get paid thursdays so ill plan more later in the week and we go shopping on fridays and saturdays.

W - Crockpot (need to check pantry before choosing recipe)
R - leftover night or bisquick quiche
F - Quesadillas, filling to be determined
S - breakfast for dinner, probably pancakes

Homeamde Mac & Cheese is a great meal for both dinner and lunch. If you have a toddler it a great chance to let them help out with making food too! Cost is next to nothing and you can make it anyway you want too.

Make some pasta, cut up some cheese any kind or mix will be great, add diced or crushed tomatoes ( if you want), add anything else you have that might fit the meal ( optional ). Bake til it lightly brown and crispy on top, let cool a bit. Eat!!! Leftovers are extra good for that quick meal.

D - Turkey burgers, corn on the cob, red beans w/rice

Wednesday:
L - Ham, tofu, cucumber sandwiches
D - Picnic at the music festival night

Thursday:
L - Quesadilla, soup
D - Chicken w/red thai curry, rice, veg

Friday:
L - Noodles w/veggies
D - homemade pizza

Saturday:
L - Chilled tofu w/seaweed, gyoza or potstickers
D - Crockpot chili

Sunday:
L - Omelette
D - pasta alfredo (egg, soycheese, spinach, fresh tomato)
