this is in no partucular order

green spaghetti (spaghetti with a spinach sauce)
turkey Meatloaf, mashed potatoes, salad
chili
hamburgers (i am going to use ground chuck- we usually do turkey burgers but I am craving a "real" hamburger)
home-made chicken nuggets, mac and cheese, green beans
chicken taco salad (with black beans and corn)
tacos
chicken salad sandwiches and soup (some type of bean soup)
Spaghetti with tuna sauce
breakfast _ pancakes turkey bacon and eggs

I am never quite sure until the middle of that day. I try to do veggie 3 time/week, and the rest of the time fish, beef (we bought 1/4 of a cow) about once a week, turkey something, and chicken something. I don't know what to make until I know the weather.

Today, it was raining, but really *hot* and humid out, so I did wild salmon (frozen) on the grill, with a salad, and grilled potatoes & spinach.

If it's hot tomorrow, I'll grill veggie burgers (I don't like to do meat two times in a row) outside. If it's cool, I might make a bean & sweet potato stew or a veggie soup of some sort inside. I hear it's supposed to be hot and humid here for the next few days. If that's the case, I will only grill. I had to turn on the AC yesterday (in Oct in MA, and I hate doing that). If I use the oven, it will be too hot not to do so again.

Here is my families menu for this week...I just finished it..

Sun....Chicken Biscuit Pot Pie,Hm pear cobbler.
Mon....Hamburgers on hm buns and hm french fries.Fruit salad.
Tues...Scalloped Potatoes with Spam.Honeydew slices.
Wed....Chicken Fried Rice and hm egg rolls.Pineapple chunks.
Thurs...Hm Vegetable Soup with hot bread..Pears.
Fri.......Meatloaf and mashed Potatoes with herbed gravey.Melon chunks.
Sat......Heat up all the leftovers and have a buffet....

Ok, the weather is really turning cold here - what autumn meals are you making this week??

Squashes are still very cheap, as well as pumpkins, beets, green beans, greens, potatoes, carrots, yams, herbs, plums, pears, apples and chestnuts. I'd love to hear everyone's fall menus!

Sunday: veggie stew wth dumplings and baked apples
Monday: Spaghetti with homemade sauce and tofu nut balls
Tues: Soba noodles with veggies and teriyaki sauce (soy vey was on sale this week - SCORE! lol)
Wed: Stuffed acorn squash (stuffed with lentils, rice, raisins)
Thur: Seitan, miso gravy, baked potatoes and kale
Fri: Pesto Pizza
Sat: As usual, soup and bread. I am thinking squash soup and oatmeal bread.

I made the veggie stew with mushrooms, cauliflower, onions, garlic, yams, carrots, kale, and seitan... very filling and cheap, 2yo dd ate 2 bowls.

Tuesday - Chilli with cornbread
Wednesday - Baked ravoli with garlic bread

Friday is grocery day

Oh lets see...

Tonight was left over night we cleaned out the fridge and tomorrow is grocery day!!!

M - baked fish sweet potatos, green beans, jello salad
T- pork chops, corn, fried potatos
W- country fried steaks, mashed potatos, salad
T- chicken, brocalli, rice bake in crokpot
F - me and dh out together shopping for a wood burner
S- tomato soup and sandwiches

weathere was cooler here but is supose to be in the higher 70's this week... so we'll see how things go!

I am having such a difficult time with the menu this week!

S: "Chicken" (tvp) pot pie
M: Seitan with mashed potatoes and squash
T: Spaghetti and Tofu Nut Balls, homemade sauce
W: Cabbage, seitan, macaroni - goulash-y thing
Th: Sesame "chicken" with broccoli
F: Homemade pizza with the sauce from tuesday.
Sat: Grocery shopping day! This has been a lean week/10 days so we will likely splurge a little and have dinner at a chinese buffet or buy ingredients for a special meal.

Last night was Groundnut Stew with a green salad.
Tonight is black beans and rice with chips and salsa.
Tomorrow is Jamaican Black Eyed Peas in the cp with rice and Coconut cornbread.
I've also got for this week: lentil curry with ginger wasabi baked tofu
beans and greens and
4 grain tomato soup with homemade pizza.

Sunday I made chicken soup with (brown) rice.

Last night was tempeh sauteed in olive oil until crispy-golden in with onions and collard greens and a litte tamari. I served it with steamed millet and butternut squash. Served with salad.

I am doing a pot roast tonight- with potatoes, carrots, cabbage, and some homemade cornbread stuffing. Salad.

I am craving sweet potato and black bean stew again- my fav recipe from Vegan Planet. I'll probably make that tomorrow.

I have also been craving cilantro, so maybe something Mexican on Thurs.

Hey-- if there are no particular requests, I cook what I like...

I'll let you know how they turn out before I pass them on. Haven't made either recipe yet. :LOL Wouldn't want to tell you to make something that turned out icky, so I'll try em first and let you know.....

I am going to make:
Turkey Chili bake (turkey chili, with sweet corn mixed in, in a casserole dish topped with cornbread batter and baked)

Falafel and pita ( I like Fantastic Foods' falafel mix) with cucumber, tomato and onion

Tuna melts and baked fries

Butternut squash soup and spinach salad ( i have a great soup recipe if anyone wants it!)

Stirfry with sushi rice (the sticky kind seems easier for DS to feed himself)

And on the last night we usually have canned soup and grilled cheese night.

Alright, so the beans were no good, I had a feeling about them.
The cornbread turned out alright, I would probably make a few adjustments next time.

Coconut Cornbread
Mix together 1 3/4 c cornmeal, 3/4 c flour, 3/4 c toasted coconut, 1 1/2 t baking powder, and 1/2 t salt. Separately mix together 1 3/4 c plain yoghurt, 2 eggs, 1/4 c milk, 4 T syrup, and 2 T oil. (Next time I would probably replace the 1/4 c milk and 3/4 c of the yoghurt with coconut milk. It was a little tart for me.)
Put into a buttered loaf pan and cook at 350 for 50-55 minutes.

F: "hot dogs", ginger slaw, leftover beans

Time to plan again. I try to do 2 weeks at a time.

Kids' fav--roast chicken, potatoes, broc, carrots, salad with feta, whole wheat baguette (trying to fill the kids so they wouldn't eat too much candy before bed).

Tonight- stir fry with crispy tofu & udon noodles.

Tomorrow- beef stew

No way can I think further ahead than that.

over egg noodles W/ corn mixed in (can also use grn beans)

Tu: Navy Bean Soup
HM Dinner rolls, Green Salad

Wed: Stacked Nachos

This weeks menu:

I am making apple pie, apricot jello (my craving), and chocolate chip cookies for dh.for desserts for the week. I have my father who is by himself over every Sunday for dinner.

Dinner menu only, as lunch is either leftovers, or just made up stuff.

Monday: Gawumpkies (stuffed cabbage), & butterd egg noodles

Tuesday: Stuffed Peppers & Jasmine rice

Wendsday: Whole wheat Penne with homemade meatballs, garlic bread, and a salad

Thursday: Chicken Fajaitas (Oh how much I have been craving these!!!) With lots of sour cream, and grated sharp cheese, Yum!

Friday: Cajun chicken sandwitches with onions & peppers & corn

Saturday: Tomatoe rice soup, and grilled cheese (spread very tiny amount of real mayo on each slice, then put american cheese on) Yummy!

Sunday: Pot Roast, Mashed Potatoes, corn, and glazed carrots

For some snacks I have been cutting up apples & using peanut butter for dip, also I like to make garlic bean dip, use any kind of canned bean, lots of fresh garlic, olive oil, and make pita chips.
