Dried mango recipes?

I haven't posted on this board before, but I'm hoping one of you can help me... My very wonderful mother-in-law just sent us a case of dried mangoes for Christmas. Any ideas for recipes? They're a little tough to eat as-is, and I can soak them in a little water for dd, but I'm certainly not going to use a whole case that way! Thanks for any help!:

Hm. I love eating the sugar-soaked dried ones plain (the truth comes out!), but I can't imagine having an enormous case of plain, tough, shoe-leather ones! Perhaps you could reconstitute them in water (or a flavored liquid) and use them in quick breads, or to make mango chutney or pickle? Actually, one of the latter two might be a good idea - it's so time-consuming to cut up mangoes by hand for that purpose. And it's lovely to have jars of homemade spicy chutney around for Indian meals, to jazz up pork roasts (if you're a carnivore), etc.

Yum! Chutney is a great idea, Marlena, thanks so much. I also like the quick bread idea. Wonderful!
