I know exactly what you mean. I took my 2.5 year old DD to see "Stuart Little" and she went into hysterics. She was crying and yelling at the screen, every time Stuart Little was in peril from the cats (which is pretty much all of the time). She finds the shark scenes in Nemo utterly devastating. I'm glad to know that she has empathy for small animated creatures, but letting her watch movies is out of the question until she develops a thicker skin.

bumping with another one i thought of - fly away home. i cry every time i watch that movie. again, some worry-able moments, including the mom's death at the beginning (but you could easily skip that scene and not miss anything in the plot).

I was thumbing though the book "Family Movie Nights for Kids" and out of 25 movies, the only movie that had no cautions was "Sound of Music" which was one of my childhood favorites (though it is quite long)

The only disney "princess" movie that I know of that isn't scary is Cinderella. I really like it. There's a bit of tension when the step mother locks C in her room but it's no Ursula the Sea Witch or anything.

We like little bear videos, but it is not actually a movie. Have you looked at Charlottte's Web? We read the book first when my son was four. This long rainy weekend we got the vidoe, but are only 1/2 way through.

My almost 6 year old is terrified of many movies. She did well with Monsters, Inc for some reason, though. They both love The Sound of Music and they love to watch our wedding video and old, old videos of me when I was a dancer. They have also enjoyed the old Little House on the Prairie DVD's. Be careful with those, b/c there are some tense/scary moments in the later ones.
As far as Disney goes, The Aristocats is cute and not scary.

Not movies, but I really enjoy the Kipper videos from our local library. I like Caillou too, but that's not available as often.

The only G-rated thing I've seen recently is the new Wallace and Gromit movie, oh wait, what about the earlier ones? Hmmm, no one dies in them, but they might have scary bits I'm not remembering.
