Anyone have a recipe for Vegan Pecan Pie

My mother in law made me a vegan pecan pie a few years ago but she won't share the recipe because she thinks it came out terribly and doesn't want to embarrass herself. (It came out flat, but it tasted fantastic, btw).

So, does anyone have a vegan pecan pie recipe they can share with me? I have a hankering.

If you don't have a vegan pecan pie recipe, but think you've got a non-vegan pecan pie recipe that could be easily veganized, I'm all ears.

Sorry---no pie recipie--but I have a vegan pecan muffin recipie.

Pecan Sticky Muffins (vegan)

Pecan (middle) layer
1/4 C canola oil
1/4 C maple sugar powder
1 C chopped/diced pecans
2 T nutritional yeast - grind in coffee grinder after measuring
pinch of salt

Muffin batter - dry
2 C unbleached flour
1 Tbsp baking powder
1 tsp ground cinnamon
1/2 heaping tsp salt

Muffin batter - wet
1 C soy milk
1/4 C canola oil
1/2 C flax seed mixture: (2T flax seeds, grind, add enough water to
make 1/2 C, beat 50 times by hand so that mixture is "goopy")
1/2 C maple sugar powder
1 tsp vanilla extract

Preheat oven to 350 degrees. Oil muffin cups lightly - recipe makes 12
muffins.

In a small bowl, combine "Pecan layer" ingredients. Mix well.

In a large bowl, sift together "Muffin batter - dry" ingredients.

In a third bowl, mix together "Muffin batter - wet" ingredients until
smooth. Stir into dry ingredients until just moistened.

Into each oiled muffin cup, spoon 1 t batter (spread it out if needed),
1/12 of the pecan layer (spread it out if needed), and then divide up
the rest of the muffin batter to cover the pecan layers.

Bake at 350 degrees for 25 - 30 minutes or until muffins test done.
Let stand for 2 minutes; remove from pan and let cool. Serve warm.

A yummy pie recipe

This pie is from How it All Vegan by Tanya Barnard and Sarah Kramer-

Chocolate Bourbon Pecan Pie

egg replacer for 2 eggs
2 Tbsp molasses
1/2 cup corn syrup
2 Tbsp Bourbon (optional)
1 tsp vanilla extract
1/8 tsp salt
1 1/2 cups pecans, chopped
1 cup chocolate chips
4 whole pecans
1 pie crust - see recipe I'll post below

Preheat oven tp 350 degrees. Mix together egg replacer, molasses, corn syrup, bourbon, vanilla, and salt. Stir in chopped pecans and chocolate chips. Pour into crust and arrange whole pecans on top. Bake for 40-45 mins.

use this crust or Marie Callender frozen pie shells are vegan.

Pie Crust - also from How it All Vegan

1 cup vegetable shortening
1 tsp margarine
3/4 cup boiling water
3 1/2 cups pastry flour OR 3 cups all purpose flour
2 tbsp baking powder
1/4 tsp. salt

Mix together shortening, margarine, and water until creamy. Add the dry ingredients - flour, baking powder and salt. Stir until dough forms and then knead for a minute or two. Wrap dough in wax paper and chill for about 3 hours before rolling it out. Roll the dough into two pie crusts.

omg I am bumming -- it seems like whenever I eat nuts dd throws up the next day. So I am holding off a while longer, I'm hoping to bf another year or so, I don't know if I can live without nuts that long . . .
