I have been eating about the same thing each day for two months! Here it is:
Breakfast: whole oats with a little honey
Lunch: green salad with a bit of grilled chicken or salmon
Snacks: grapes, apples, bananas, raw carrots, rice cakes, raisins, organic apple sauce
Dinner: Grilled chicken or lamb, rice, whatever fresh veggies I have and can steam up.
Unfortunately, you have to stay away from pretty much everything that is prepared in the stores. I have been able to do corn with DD though, so corn tortillias have replaced my bread. I sometimes make a wrap with them for lunch with some grilled chicken and lettuce. When I am in the mood for something bad, I quarter and fry a few corn tortillias and have chips. I can't put anything on them, but that is ok.
There are some organic salad dressings that you can eat too, you just have to read the lables.

Oats aren't gluten free. We are gluten, dairy, corn, egg sugar and soy free. If you aren't stripping fruits and veggies (for allergy purposes) You have a world open to you. We do:
day 1: breakfast-chicken sausage and a smoothie (apple cider, strawberries, peach)
snack: apple with hazelnut butter
lunch: salad of tomato, cucumber, zucchini and olive with some diced chicken
dinner: chicken with asparagus and summer squash
dessert: baked apples with cinnamon
day 2: breakfast-smoothie (orange juice, papaya, banana) and butternut squash pancakes (butternut squash and flaxmeal and water fried up-they love these)
snack: oranges and sliced banana
Lunch: organic hot dogs with no fillers, avacado
snack: banana fritters
dinner: meatloaf, swiss chard and mushrooms, onion saute
dessert: squash cookies (a big hit at our house!)
Day 3 :breakfast-smoothie (grape juice, mango, and raspberries) and muffins made with almond flour
snack-grapes
lunch-turkey burgers and carrots
snack-hush puppies (almond flour)
dinner-turkey and stuffing (almond flour, pepper, celery, carrot etc.)
dessert-coconut cream ice cream with raspberries.
That's all I have time to post right now-I'll try and come back. This allows you to not repeat any food for at least three days. I have worked out a five day rotation so I'll post more when I can.

Also-if you can find sunshine burgers- they fit your criteria and they are FANTASTIC. Just sunflower seeds, rice and carrots.

I have just embarked on this diet of no soy/dairy/wheat/gluten/berries/corn for me and my ds. It's hard to do!

just want to watch and see as well, ds2 has Celiac Disease and the dietician want him dairy free in addition to gluten free... He was dairy free up until 6 mo ago -- so we go back...
