Minky and such for outer of AIOs ?

So I am intrigued by this Minky stuff. I know that JamTots sell their Berry Plush which is Minky over PUL. But can you do Minky only as a cover (like fleece?) It is a microfiber polyester, so I wonder if it would work alone as a day cover.

Also, would a pocket made with 100% polyester as the cover get completely wet and wick horribly? Has anyone tried this?

And what about this furry fleece Joann's has. Would that work for a cover?

I have some minky here... the kind with the bumps (minkydot)
Just for you I got it out and poured water on the backside. It pooled and did not go through the fabric. I used a tissue to act as a soaker and then squeezed it together and it did soak through. But it wasn't sopping wet to the touch, just damp. I would not trust it by itself as a cover. You could sew a hidden PUL layer inside the minky outer and whatever inner layer you choose.

I made my first 2 practice diapers from the fleece from Joanns and it seemed to work ok... didn't leak but I changed them after 1 pee. I haven't tested my malden mills dipes yet so I can't really compare. I'm planning on making a medium honeyboy for Sofia (she's my toddler and tester) when I'm done sewing the 3 newborns I'm currently working on.... I'll let you know if it works any better on her butt than the Joanns.
