good non-dairy or vegan cookbooks?

Hi,
My 16 month old is entering her picky eater phase and I'm looking to branch out with some new non-dairy dishes to cook. I've checked out a few vegan cookbooks, but the recipes are fairly labor intensive. Any fairly simple--or complicated but super tasty--cookbooks out there that would work for a dairy allergic child? Indian, asian cuisines....?

We've had good luck with Vegan Planet. It even has good holiday recipes. I'll also second the vegweb.com...

It's not completely vegan, although most recipes come with a vegan option, Feeding the Whole Family by Cynthia Lair. I love this cookbook.

How it All Vegan and The Garden of Vegan are by the same two ladies, and have lots of simple recipes that are kid-friendly.

I second Leatherette.

I am vegan but I usually ONLY cook out of those two books and using VegWeb. I like those two books because they are easy and practical. I love the concept of "anything goes" vegetables where they give you a list of veggies that qualify and you use what you have. So smart!
