what is yeast extract? help!

help, i'm trying to find a good veggie roast for christmas and so many recipes call for yeast extract. i don't have time to figure out what this is or find out where to buy it, so does anyone have a good substitution? i do have yeast and nutrional yeast.

i will be forever in debt for whomever can answer this today.

Wow. I am a chef and you had me stumped. I looked through my books though and found out what it is.

"A vitamin B rich mixture made by combining vegetable extract and the extracted liquid of fresh yeast. Ranges in texture from liquid to light paste. Used as a seasoning and as the base for various products."

Not much help, it doesn't say where to get it, but it does seem to be different from nutritional yeast flakes.

I would have to see the recipe to know what you might be able to substitute . . .

i also found this recipe (the nut roast) and it says i can substitue soymilk or wine for yeast extract. i did find yeast extract in the store and it was soooo expensive. (i'll get my flavor and B12 elsewhere thanks.)

anyway since i wanted to make a nut roast anyway i'll just use this recipe. never before made or eaten a nutroast before so i hope my family (and guests) are happily surprised.

I am from England, Uk and the vegetarian spread called 'Marmite' is yeast extract. It can be found at Henry's Market Place here in Southern California, so perhaps you can buy it at a Healthfood store near you. It is very healthy, (asides from salt content), and yummy spread on toast with butter, or you can make a hot drink from it, (great this time of year).

Are we talking Vegemite here?

My Aussie friend kept leaving jars of it in our pantry the entire time she lived in the states. It's certainly yeasty and pasty.

i guess it's both vegemite and marmite. i don't know why it has never caught in in the states but it seems to be very popular in australia and the uk.

i left it out of the nut roast anyway and substitued some veggie seasoning. it was a good thing because my guests (from england actually) said that if it contained marmite that wouldn't have eaten it. they can't stand the stuff. they explained that yeast extract is one of the hote-it or love-it kind of foods and they would put it in the first category.

...and in case anyone is interested, the nut roast came out a bit crumbly. don't know if the yeast extract acts to hold it together. it was still good and everyone was quite pleased with it. as a long time vegetarian tho, it didn't rank up there with any of my favorites.
