Ener-G egg replacer?

I just bought some of this and would love to hear what recipes it works best in. My boys a begging for cookies and we have a B-day coming up soon...

links are great also.

My boys are allergic to eggs, peanuts and tree nuts.

I've had luck with boxed muffin and cornbread mixes. Whatever you do, don't make boxed brownies with it, as the mixture will stay liquid no matter how long you cook it. My homemade cookies never worked with it either.
I'm interested to hear what other can bake with it.

I've never had anything come out right w/ Ener-G and neither has my sister. We both ended up tossing it. Hope you have better luck with it! Hmmm... Just a thought here, but my sister and I make everything from scratch, so maybe that's why--perhaps it only works w/ boxed mixes?? Anyway, good luck!

I've used it in homemade muffins with great results. I've had it in cookies that were yummy.

OP I have a great chocolate cake recipe that's basically ww flour, oil, sugar, vanilla, and cocoa powder if you're interested.

Oh yes, I would be very interested. I have made one choc. cake without eggs and its ok. It uses vinegar instead of eggs. It was good once or twice but they all want different.

Hi there!
I use this for any/all bread/cookie/cake recipes that call for eggs and it works just great!
You can't make scrambled eggs out of it :LOL It is just a replacer for eggs in primarily baked goods.

P.S. You can use any recipe you want and simply adapt it using the EnerG egg replacer (per directions on package) instead of the eggs. I have made lots of baked goods from scratch this way and it works great (especially cookies...I have a little "cookie monster" too ).

I used to use it, but I find millled flax seed makes a better egg replacer
(follow directions on side of box )
and cheaper!

Ok, I just finished my first experiment. I made Blueberry muffins using Ener-g (didn't hold together) and Blueberry muffins with milled flaxseed (perfect results). Next I tried out lacey Oatmeal cookies with Ener-G. The flavor is good but they just are not holding together at all. I think tomorrow I will try cookies with the flaxseed.

Can't wait to try out others recipes.

For the oatmeal cookies, try adding a tablespoon or so of milk (I use vanilla soy milk), that should help.

ive used the energ replacer in the past and it didnt work well for me, i just do the flax seed thing. its better for you,too!

I've found that doing a combo of flax seeds AND the baking soda and vinegar replacer works best. LOL!

I have used it to make cupcakes, cake brownies, and pancakes. All turned out great. I think one of the things you have to be sure to do is use warm water and make sure it all gets mixed together well. If you let it sit for a few seconds you can see it get kind of frothy...don't know if that might be why some of your baked goods did not turn out.

I was thinking of this last night:

Yes, be sure you mix the EnergG well with warm water until it's frothy.
And...I was also remembering that I've noticed that some batters aren't as moist as they would be with eggs (I'm not sure the EnergG replacer is as much moisture as eggs). So I have improvised, adding just a bit more moisture to the recipe. I add the EnergG and then add a couple of tablespoons of rice/soy milk so that the batter/dough is of a thinner or "stick-together" consistency. Maybe this is why it's worked so well for me?

Have had fantastic results with erer-g for cookies, cakes, muffins & pancakes. I don't use a special recipe - just sub the # of eggs called for in the recipe with the correct amount of egg replacer.

Guests can never tell the difference.
