Meal Planning while eating a mainly raw/organic diet

Eeek! I am totally overwhelmed with this. I don't want to freeze foods. I don't want to cook foods. This of course means I will have to shop quite often.

Because of the Lyme Disease, and the fact that I will hopefully be starting treatment, there are some dietary guidelines I must follow:

yogurt several times a day
avoid alcohol & limit caffeine
lots of water with lemon
use virgin coconut oil and garlic
lots of veggies & fish
low fat
minimal starch & other simple carbs



I don't want to get bored with all the veggies I'll be eating. Any suggestions for meal planning?

I would suggest that you get a nice cookbook about salads and ethnic cooking. Look up what is in season and check out the farmer's markets in your area...

There are a few good "cook"books that deal with raw food preparations since it seems to be comming into vogue again.

What about a traditional greek salad. Just cut up onions, green peppers, cucumbers and tomatoes. Sprinkle with oregano and garlic salt, crumbled feta, then put balsalmic vinegar and olive oil. You can eat it with fish, it is a great side dish.

Also, greek yogurt dip. Get a large tub of plain yogurt, strain it for several hours with a cheese cloth, so it get thick. Grate a cucumber and finely chop garlic. Mix together with some lemon juice and olive oil. You can dip pita bread in it or veggies. Also, you can roast red peppers and dip those in it. Or use it as a spread for meat or fish.

I bet there are a ton of other greek recipes with those ingredients, I'll check my cookbooks.
