VOC / offgassing question

Hi there. We want to remodel a home, but we have a 5-week-old baby. I know we want to use no-VOC paints, of course. Has anyone had bad luck with those paints not holding up? I had one weird experience, and wanted to make sure it was isolated... Also, I want to know, if we had to have the floors refinished, how long would that offgassing last? Acrylic varnish versus oil? Also, if we needed to prime panelling before using the no-VOC paint, would we be able to use a no-VOC primer, or would that "stick"? If we used a regular primer, and painted over it with no-VOC paint, how would that be? If we needed to touch up molding with an oil-based paint (what is on the molding is oil-based) how long would that offgas? Thank you so much in advance to anyone who knows about this stuff.

I wondered all of those same questions myself. I hope someone has some experience to share.

We finished my DD's room MONTHS before she was due and kept the bedroom door closed and windows open. (Kind of funny since she seems to spend more time in our room since we co-sleep!) I also made sure I stayed out of there since I was pregnant.
