What is your fall back dinner? - Page 2

Honestly,

It's the SONIC burger down the street from my house. Coney cheese dogs with tator tots for me and burger for DH.

DS gets mama's milk & cheese or something else finger foodish.

My mom's standby was always meatloaf; hence my constant aversion to it.

Fajitas (I can have the onions, peppers, and meat frozen and defrost it in the same pan--add cheese on a tortilla--good to go)
Quesedillas (I can have the onions and meat in the freezer--cook it up fast--add cheese and put on fry pan with tortilla--sometimes a tomato too)
Tacos (ground beef from frozen or refrigerated add seasoning and cheese on tortilla)
Sloppy Joes (ground beef, onions, in your fav. sloppy joe homemade sauce)
Spaghetti (jarred sauce, meat, noodles--awesome)
Stir-fry (meat and veggies can be frozen...and then I do minute rice : with soy sauce)
Chicken and rice pilaf (one pan) (this can be done with frozen veggies, canned chicken, and minute rice--with some bullion)
Pizza (frozen or ordered)
Steak/chicken and peppers sub (onions and peppers frozen, meat, stir fry up--add to french bread with cheese--awesome)
Mac and cheese (yes, the box--if you want it more healthy--add meat and/or veggies)
Burgers (can all be frozen--patties and buns)
Chicken sandwiches (just take a chicken breast that's cooked and add it to a bun--you can have it BBQ or seasoned how you like--add any condiments you have)
Creamy pasta (pasta, milk, parmesean cheese, garlic, chicken, broccoli--you can also add a can of cream of mushroom and/or cream of chicken)

I could go on forever!!!

-vegan "chicken" nuggets and sweet potato fries... dipped in ketchup and honey (this is one of my bad ones)

- green cabbage, pintos (canned if i'm hurried) and a bag of baby carrots, steamed for 20 minutes or so... over brown rice with shoyu soy sauce (what i'm eating right now ) this makes good leftovers!

- kale, lentils, cubed tofu steamed, brown rice, shoyu

-this is rare, but it's good. pan friend veggie dogs, melt chedder cheese over it and cover with bun, fry a few more seconds (not too much oil) then serve with honey mustard over it.

- frozen pesto i made and some pasta

Zatarain's Jambalaya mix --with lots of veggies, (and shrimp, chicken breast chunks, and crawfish---all things that we keep on hand in the freezer, they don't have to be thawed first) added. If you dress it up and use stock as the liguid, rather than water, it's very tasy.

Pan seared salmon (salmon fillets thaw quickly under cold water).

Peanut sesame noodles, hot or cold.

Fried rice with veg. and shrimp, if there's leftover rice waiting already.

Pasta with Newman's Sauce, and lots of fresh parm.

Veg and pasta sautés of various kinds. Lots and lots of them.

Quesadillas.

Fritatta.

Quesadilla with some black beans from a can

Scarmbled eggs and cheese and black beans

If I have some cooked rice or quinoa and leftover chicken breast hanging around, I throw them in a frying pan, add frozen peas, cococunt milk, and jamaican curry and salt and pepper. Super easy and quick (if the rice and chicken are already cooked, of course).

mac-n-cheese (yep, boxed), pizza (memorized all delivery numbers ), burritos, breakfast stuff (eggs and toast, biscuits and gravy) We have "fallback" dinners quite often. Like tonight. I'm about to go hook us up with some boxed mac-n-cheese and some good ol' frozen chickn patties. But hey, I'll throw in a vegetable for color

veggie burgers or nuggets, frozen fries (alexies brand?) w/salad

homemade macaroni and yeasty cheese w/broccoli and a salad

Ahh, I fondly remmeber the days of suburban living and take-out, or *gasp* delivery!

For emergency nights here, it's brown rice and black bean burritos, made with a can of those diced tomatoes with jalapenos. I always have salsa, etc.

Sloppy Joes. You can just brown burger and add ketchup and some seasonings and let it simmer. Kids love it.

Pasta and dried tomato pesto. I dried a ton of tomatoes from the garden. I grind up 5 or 6 slices per serving, with a small handfull of walnuts, a clove of garlic. Add olive oil and parm cheese. All done, no cooking. Serve over HOT pasta with a garden salad. Tastes like you worked hard!

Quiche. Frozen pie crust, 6 eggs beaten lightly, tomatoes and summer squash or zuke and cheddar, or spinach and mushroom with feta and onion.

Real oatmeal with raisins and brown sugar and walnuts and cinnamon.

Tacos. I just cook the lump of frozen burger. I keep the shells on hand, always have salsa and cheese. Sour crm makes it a party! (And I don't buy that nasty mix. I cook the burger, drain if ness, add can of tomatoes with chiles, simmer for a while)

Soemtimes I do frozen burgers and dogs. I just book 'em frozen, they're fine.

And let's fess up now. How about..........cereal? WHo hasn't given the kiddos a bowl of cereal on a really bad night?
