I know this site is for moms but I stumbled across it searching for NT-type meal plans. I totally impressed by all your ideas but I need to scale down a bit o cook for one on a budget. Did any of you do this before you started your families? Any suggestions?

I know a lot of people who start with freezer cooking and just split things into single servings and freeze them. It is very easy to do once a month cooking for singles cause you don't need very many recipes.

Lots of NT things freeze great.....Soups, stews, baked oatmeal, shredded chicken, even soaked grains like rice, quinoa...all freeze great. I bulk cook them for my large family every week.

You may want to check out the stock the freezer threads for more NT recipes.

KerryAnn does lots of freezing and bulk cooking so her website may have lots more ideas.

redbaloon - I've only ever done this with a family, but I would think that if you made a meal that said it would make 4 servings, you could freeze half for later and have the other 2 portions for dinner and then lunch the next day. You could likely plan one menu and be able to cover two weeks of meals.

KerryAnn has a wonderful menu mailer (krankedyann) which my family of three (me, dh, and a toddler) find more than sufficient for two weeks of meals. It works really well! :0)

I've got quite a few customers who do this- either halve everything and cook for two, or go ahead with the full mailer and only cook every other week.

I might offer a 'lite' version where you only receive the mailer every other week if there's enough interest.

Thanks for all the suggestions. I had no idea all those things would freeze. I don't even know what baked oatmeal is! I would be interested in a "half" mailer if it ever became available. One other question-- do any of you buy grains in bulk? Could I do that just once a month? Would they keep alright? I've hesitated because Sally Fallon lists several that go rancid if not kept in airtight containers. Does anyone know which are safe to get in bulk and how to store them?

I buy almost everything in bulk. Grains in 50-100# bags. I seal them with Gamma- seal lids. I get my grains from Bread Beckers.

You can search Baked Oatmeal on the traditional Foods forum. There are lots of different recipes. I have one posted. It is like bread pudding but made from oatmeal.....very cake like but full of soaked oatmeal, coconut oil, raw milk, pastured eggs.....topped with Butter...so yummy.

Lots of things freeze. You may want the check on the yahoo group. Traditional foods Once A Month Cooking.

TFOAMC just about any Once a month cooking site will give you great instructions on what freezes well and how to freeze. I mostly use glass, canning jars and corning wear to freeze. Lots of corning wear come with easy snap on lids. Works great and comes in a variety of sizes.

Newby in need of help!

I was introduced, begrudgingly, to the natural world of medicine a couple of years ago & am now very grateful for that. : We use natural remedies for our common ailments & drink Limu daily with wonderful health benefits. We eat organic as much as possible & try to avoid grease & sugar.... When we moved I met a new friend who introduced me to the world of fermenting...I've only recently been introduced & returned from vacation deciding to incorporate it into our lives, too. I would like to begin on a small scale as I learn more about it...can anyone recommend the best way to begin...small?! (should I mention I have a 6 & 8 year old...one that particularly doesn't like new things or things that look icky!

Thank you in advance for your help! (by the way I'm also new to posting stuff & threads, so I found this reply part, but couldn't see where to begin a new one, I'm clueless in more than one way!)

I'll say it. What's "Limu"?

And carrots are the place to start. They turn kind of sour, but oh so yummy. You can make them gingered or not.

I love fermented fruit butters (In NT as apricot or apple butter).

Sauerkraut is very easy too. I use the recipes in Wild Fermentation....far better than anything in NT

OK, Limu, Limu is short for "limu moui" which is a seaweed. The fascinating component of it is called "fucoidan"...which seems to have very beneficial properties that can not be found any any land based plant...including those with high antioxidant values you find in Xango, Mon Avie, etc. It is known as a "superfood". There are a lot of personal testimonials regarding limu...you can find them at www.thelimucompany.com, but more importantly, you can find all of the Doctor's medical studies on "fucoidan" at www.pubmed.org basically, you type in your problem, say "heart" & the word "fucoidan" and the studies will come up showing you the results.

My testimony is wonderful for our family, but not nearly as astounding as many who have broken backs, needed surgery & then not needed it after drinking lots of Limu! I suffered from what I thought were allergies & so did our 2 year old...we both took Zyrtec daily & I finally went to the allergist to discover I was allergic to absolutely nothing! I had a friend bugging me to see an herbalist & I finally went...now we drink Limu...I give my son 2 Tablespoons a day & he hasn't had an allergy symptom since! I drink more like 4 Tablespoons twice a day & take an herb to balance my thyroid & I haven't had any problems since either! When I'm not drinking my Limu, I feel tired & lethargic daily & need a nap every afternoon...I can't go to sleep at night, I wake up in the middle of the night & I drag in the morning. With Limu, I found out what normal was again!

And that's all I know about Limu...which isn't much...but it works for us! :-) (other than if you do decide to drink Limu, be cautious as to the concentration...many sell it less expensively than that from the limu company, but it does not have as high of a concentration, so you have to drink more, which makes the price equivalent or higher...and of course Limu can be turned into a home business if you choose...we just drink it ourselves & tell others that need it!)

Anybody read this? Seems like a good "first step" for us reforming "fat-haters". I haven't read it, but it seems in step with the spirit NT, while being mostly vegitarian.
