My first recommendation is always The Homeschooling Handbook by Mary Griffith. It's a great overview of everything from choosing a curriculum to dealing with criticisms. It covers the basics of legal issues (although she'll find more up-to-date info online) and some of the more common challenges.

One of my favorites is Real Life Homeschooling, not because its a 'how-to', but because it shows so many different families and how they make homeschooling work for thier family. It really illustrated that there was not ONE way to homeschool but one (or more) for each family, that homeschooling was as individual as the family itself!
