Leftover Red Beans and Rice Recipe-HELP!

Okay, I made soem red beans and rice yesterday and cut the batch in half. Added sausage and onion to one half and have the other leftover. I need to come up with something to do with the non-sausage half b/c we will likely eat the sausage leftovers for a few days and dh will get sick of rice and beans. So this needs to be something different. HELP!

I throw any kind of rice & beans into tortillas and freeze!

I would probably add some chicken & cheese if you have it, mix it all up, and put in tortillas and make burritos. Wrap individually in parchment/cling wrap and put in a freezer bag for future meals.

Ooops! I thought I was starting a new thread, when I accidentally replied to this one.

Anyway -- have you thought about sticking leftovers in the crock pot with more veggies, chicken and broth -- make a soup out of it?

You can take some tortillas (or you could make some) and make enchiladas. You could use red sauce or make a masic white sauce and top with cheese and maybe even some olives. This freezes really well too
