I guess he is allergic to milk

I put my son on a casien free diet starting last Friday and he has been better ever since! It's amazing to me!

His behavior has improved at least 80%! I was able to take him shopping with me 2 days ago and this morning. This used to be something that I would dread because he would be 'out of control'. But he has been rather pleasant the last couple of times.

Temper tantrums are pretty much gone.

He still wets his bed, though, so I will have to see if I can find another solution. Then again, he is a young 4.

Finding butter was a huge pain in the butt, though! I was standing in the butter section of the supermarket this morning for about 15 minutes reading all the labels. And thankfully, ds put up with me.

Woohoo!! I'm so excited! A little sad that he's allergic/sensitive to milk, but am very excited that I finally found a solution to his behavioral issues.

Glad to hear it. It won't work for everything, but we sub coconut oil for butter. It's fabulous with almond butter on toast or even in veggie dishes. It's divine to bake with and as a bonus is really high in lauric acid, (found also in breastmilk!) kills yeast, and heals the gut. We make a gluten free dairy free spice cake and use the coconut oil to make a "buttercream frosting" and for the cake itself instead of butter. It's amazing! As far as the bed wetting, have you taken out gluten?

Can I get the recipe for that cake? Although we are also egg free but maybe we can find a substitute...

Can't have it now... but once I can add a few basics back (I am eating 4 things) it sounds wonderful!!

I am SO not a chef! I just use the Gluten Free Pantry spice cake mix (which is vegan and GF) and use coconut oil. For the frosting it's your basic confectioner's sugar, vanilla, (rice) milk, coconut oil and some maple syrup. I mix about a cup, cup and a half of sugar, three T. of coconut oil, t. vanilla extract, T. of maple syrup and add the rice milk until I get the consistency that I want. Fabulous every time!

Oh, and we use enerG egg replacer. It works really well. YUM! I'm thinking I'll make one just because this weekend. It's dh's favorite cake!

dairy-free "butter"

Hi,
we went on a dairy free diet last year. We were happy with Earth Balance, which is the vegan version of Smart Balance. Tricky labeling though, b/c Smart Balance has casein or whey or some other milk derivative in it. Our regular supermarket started carrying Earth Balance recently; other than that can find it at TJ, Whole Foods, Wegmans, and most natural food stores I've ever seen. You can use Earth Balance anywhere you'd use butter or shortening. The taste is quite good. You better check the ingredients for other things though, if he has multiple allergies. One version has soy ....

Smart Balance is the brand I use (high cholesterol), but it has whey in it. I will look for Earth Balance the next time I go to Whole Foods. Thanks so much for the suggestion!

I'm also going to try out coconut oil -- that just sounds so yummy!

We haven't taken out gluten yet. I'm kind of afraid to because of the way I cook.

My thoughts were that if the CF diet didn't help, then I would eliminate gluten. Who knows? I may still do that.

Another great butter substitute for baking is lard. Not the kind you get at your regular supermarket, but some local butchers will carry the soft, freshly-rendered lard that our grandmothers used. It's not as bad for you as they used to think - no worse than butter, certainly - and it makes good cookies and pie crusts! MMM!
