Hi all. I'm having a friend over for lunch tomorrow whose nursling cannot tolerate dairy in her breastmilk. I'm vegetarian but I do use a lot of cheese and yogurt, so I'm sort of at a loss as to what to fix. Can you think of anything relatively easy and meat- and dairy-free that I could serve for lunch?

No fair, I was going to suggest hummus! Or falafel.
Or what about a tostada, layering (vegetarian) refried beans and/or black beans, lettuce, tomato, olives, guacamole, red pepper chunks, salsa, whatever takes your fancy, on a toasted tortilla? You can have cheese on yours if you want but it will be just as good without. Or you could get some soy cheese (just as long as it says vegan on the label and doesn't have any casein in it).

How about pasta salad? Noodles with cooked, chopped spinach, tossed with chopped raw celery, onions, olives and cherry tomatoes. Toss with oil and vinegar dressing. Or just some olive oil and salt. Serve chilled (put the dressing on just before you serve) with crusty, dairy free bread on the side. Foccacia bread is, IMO, good enuf to eat plain, or you have margarine or olive oil.
Mmmm! These all sound great. Thank you so much. All I could come up with was vegetarian chili or bean soup, but your ideas sound much better.
