Banana Cake Recipe?

Does anyone have a tried and true or even kid-approved banana cake recipe?

DS2 up and decided last night that he wants a banana cake for his birthday (Sat). I've found a few banana cake recipes in some of my cookbooks that look good but I've never tried them. And I've got a good banana bread recipe I may fall back on if I need to improvise. But I thought I'd ask around... Also we aren't veg*n, but it is Lent so vegan would be great too--and frosting ideas would be a plus. But really anything that's tested and good is a plus right now, so don't worry if it's not.

Make banada bread cupcakes and decorate them at will. I stopped making cakes for my kids b-days because cupcakes are so much easier for them to eat. For dd I made fancy cupcakes and then arranged them on a tray to be somewhat "cake" like for candle blowing. For ds I made spiderman cupcakes with spiderman cake toppers. The kids don't really care for icing so I can leave it off if I want to too (I did half iced with spiderman colors and spider cake toppers and the other half plain with spiderman cake toppers). The kids loved the whole idea of them. They have fun cake toppers for any character now. When it's time to blow out candles just make extra cupcakes for candles and arrange them on a platter with the cupcakes with the cake toppers. It looks really cool.

I have a TNT one. It's totally decadent/bad for you/not vegan/loaded with white sugar & flour, but delicious. Definitely banana CAKE, not bread, even without the frosting.

I've been PMing it to the previous posters, but I guess I might as well post it here for all to enjoy, eh?

So, artemis33, here you go! I'm sorry, it doesn't have the actual "directions" but it's really no different than any cake -- cream together the fat and sugar, add the wet ingredients, add the dry ingredients, fold in the nuts. Bake at 350 for 30-40 minutes depending on how you're making it (in round cake pans or one long 9x13 pan).

Banana Nut Cake

1 c. shortening
1.5 cup sugar
4 eggs
1 c. ripe bananas, mashed
.5 cup buttermilk

2.5 cups self-rising flour
.5 tsp baking soda

.5 cup chopped pecans

Icing:

1 box confectioner's sugar
1 stick butter or whipped margarine
1 c. chopped pecans
Cream with 5 or 6 Tbsp milk or as much as needed

My Famous Banana "Brownies"

I adapted a banana bread recipe and make it in a 9x13 pan and it comes out very brownie like. I'm sure you can make it in other types of pans (including cupcakes) and it'll turn out fine. It always gets rave reviews and frantic requests for the recipe whenever I bring it to potlucks. It's also very versatile, you can play around with the additions and flavors to your liking. I'm sure it would be delish frosted as well. Enjoy!

2 cups flour (I use 1 cup whole wheat and 1 cup unbleached white)
1 cup sugar (I use organic)
1 tsp baking soda
1/4 tsp salt
dash of cinnamon and/or cardamom
2 eggs beaten
2 1/3 cups mashed banana (the riper the better )
1 tsp vanilla extract
optional: chocolate chips (I use organic dark chocolate chips-YUM), nuts of any kind (I love walnuts but almonds work well too)

Combine flour, baking soda, salt and cinnamon/cardamom. Mash bananas and combine with eggs and vanilla. Mix dry and wet (don't stir too much, just until dry ingredients are incorporated) then add any optional stir ins like choc chips/nuts. Pour into 9x13 baking pan and cook for 40-45 minutes at 350 or until nicely browned and cooked through.

This comes out so awesome, is extremely easy and actually tastes better on the 3rd day!

I'm feeling bitter that there are no overripe bananas in my house!

It seems as though, no matter *how* many I buy, we scarf them down before they can go bad.

Sigh.
