Need a dairy/soy free breakfast idea!

hey ladies!

i'm spending the morning w/my LLL friend. i can't do dairy, she can't do soy.

i wanted to make muffins or something, but i use soy margarine. any ideas??

Am I to late?

I just came back from the library this afternoon with a cool new vegetarian book!

Here...looking through it now..(it has meal ideas )

Banana Bulgar
  • 6 ounces bulgar, cooked
    1.5 oz banana, mashed
    1 oz carob chips
    1.5 oz cashews, chopped
    1.5 oz raisins

Combine all ingredients, mix well.


[b]Fluffy Raisn Cous Cous[b]
  • 6 oz cous cous, cooked
    3 oz raisins
    1 TBSP honey
    pinch of cinnamon

Combine all ingredients, mix well.

Can you use rice or almond milk in the muffins?

Cooked grains are always good. I think I read a recipe that baked oatmeal with apricot or peach nectar. You can stir in walnuts, or sunflower seeds, or even shredded coconut.
(I might have seen this in the Mothering recipes!)

OTOH, there's no reason you can't do muffins. There are plenty of non-soy spreads that are very good. I buy Earth Balance, and I'm not sure about the soy content in that, but my in-laws buy Canola harvest. It's a canola oil emulsion. It's whipped, but it has no trans-fats.
