Caribbean Cuisine Recipe Ideas!

I could really use some help planning a menu for a dinner we’re having for SO’s aunt and uncle (they’ve bailed us out of many a pickle this winter- we wanted to give them something in return!).

Here’s the deal:

Aunt: no meat but fish, no cheese, no yeast, little sugar
Uncle: Meat and potatoes kind of guy. Likes to go out to eat so he can have meat.
SO: Same eating habits as her uncle
Me: Like aunt, but I will eat the things that she won’t.

I figured I would do some kind of Caribbean cooking thing since they don’t really use much dairy, and there’s an emphasis on fish. I think for SO and her Uncle, I’m going to make a roasted pork tenderloin with mashed potatoes and mango chutney. For the Aunt and I, I was thinking about jerk seasoned fish with pineapple salsa. And I was going to make fried plantains because I think that's a requirement with any Caribbean meal!

But beyond that I’m stuck. I have a few ideas- a seasoned couscous, corn fritters with pico de gallo. I’d like this to be a big family style dinner, so I was going for about 6 to 8 dishes. Any thoughts or recipes?

Sounds like you have enough to feed an army already!

My wedding was catered by a Jamacian friend who is vegan. He made a wonderful organic, vegan, Jamacian meal for 200! This is what we had: Baked Jerk Tofu, Jerk Stir Fry Veggies, Rice and Beans in Cocunut Milk, Tropical Fruit Salad, Rum Punch & Jamacian Coffee.
