NT-friendly cheesecake recipes?

I want to make a cheesecake for Shavuos (this weekend) and I'd like to make it as NT friendly as possible.

I've used yogurt for some great cheesecakes. I just strain off the whey (through cheese cloth) until it's a cream cheese-like consistency. I sweeten it to taste with whatever decent sweetener I have, put it in a nut crust (like what mamajessica posted), and put it in the frig to set up.

That's all there is to it? No eggs? No baking? That sounds simple enough!

Approxiomately how much yogurt would I need to make 1 pie?

That's a good question. As a guess I would determine how much filling you want and start out with 2x that much yogurt. In those days I was making 1/2 gallons at a time and I probably used a whole batch, or a bit less than one, and made a pretty big pie. The only time it takes really is straining the yogurt, but that of course, takes no effort.

Is it possible to make cheesecake with stevia? I'm having trouble using stevia for baking, everything comes out yucky. It only works for whipped cream so far...
www.scdrecipe.com has a few cheesecake recipes with honey that are NT friendly. I like the no-bake yogurt-jello one better than the one baked with eggs and dry curd cottage cheese.

I've used stevia with the method I described above. I haven't made a regular cheesecake in so long, I can't even think how it would affect it.
