Wacky Cake!
1 1/2 cups flour1 cup sugar
1/2 teaspoon salt
3 table spoons cocoa
1 teaspoon baking soda
1 teaspoon vanilla extract
1 tablespoon vinegar (balsamic works beautifully)
5 tablespoons oil
1 cup cold water
1. preheat oven to 350 degrees.
2. Mix dry ingredients in a bowl.
3. Add vanilla, vinegar, oil, and water. Blend well and pour into ungreased 9 by 11 inch rectangular pan.
4.Bake for 25 to 30 minutes.
Birthday cake
3 cups flour
1 3/4 cups sugar
1 1/4 cup allowed shortening (reed ALL ingredient lists)
3 tablespoons water,2 tablespoons oil, 2 teaspoons baking powder, mixed together
2 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon vanilla extract
1. preheat oven to 350. greas and flour two 8-inch round cake pans.
2. combine all ingredients in a large bowl. Beat well with an electric mixer until batter is smooth- about 4 miutes.
3. Pour batter into prepared pans and bake for 40 minutes or until toothpick inserted in center comes out clean.
cool in pans for 10 minutes. finish cooling on wire racks. Frost when completely cooled. (copyright by the Food Allergy Network, but I got it from The Parent's Guide to Food Allergies.)
Frosting for Double-Layer Birthday cake
Cocoa frosting
1/2 cup allowed margarine, softened (Nucoa works)
1/2 cup unsweetened cocoa powder
2 2/3 cups unsifted confectionsers' sugar
1/4 cup water
1 teaspoon vanilla extract
1. Beat margarine at medium speed in large mixer bowl until softened, about 1 minute.
2. Add remaining ingredients. Beat on Low speed until ingredients are moistened, then on medium speen untill creamy.
Creamy Banilla frosting
1 1/2 allowed margarine, softened
4 cups confectioners' sugar
2 tablespoons water
1 table spoon vanilla extract
1. Beat margarin at medium speed with an electric mixer until sodt and creamy.
2. gradually add sugar. Beat until light an dfluffy.
3. Add water and vanilla extract. Beat until frosting reaces spreading consistency. ( from Food Allergy Network and printed by Barber, Marianne S.)

I also found some great recipes from the vegan site the Post punk kitchen. http://www.theppk.com/ They do use soy in many of their recipes, but I used rice milk with ener G egg replacer with nice results with some things. She has good advice about egg replacer, too.About the soy, my daughter is allergic to soy, but she can have soy oil. If you have not already, you might want to ask your allergist if the oil is ok. It makes life much less complicated. I spectrum naturals has a 100 % palm oil shortening. My son is the one allergic to eggs and milk- makes for a fun meal.
