oat flour, dense dessert

I'm looking for a recipe that's like a shortbread cookie or something dense like that. I have oat flour, whole wheat flour, millet, maple syrup, honey and barley malt. I don't want to use refined sugar or processed flour.

Can anyone help?

i'd get whole wheat pastry flour, use that with a portion of oat flour and/or millet, and sub the barley malt for sugar in any shortbread recipe (mmmm, i have all that stuff, and some danish butter besides; might be a good way to use it. love shortbread!)

i don't think a syrup will be effective in shortbread (and have my doubts about the barley malt, but am willing to go for it. i've found it difficult to blend- do it with the dry ingredients!- i really just keep it around to feed my sourdough.)
