I'm new at making softies and am sort of learning as I go. Maybe someone who is a pro can help me out. I am doing well except when I need to sew up the hole after I've stuffed it. How do you sew it without it looking like Frankenstien? Is there a specific stitch you use?

A ladder or an invisible back stitch works best for closing. Fold back the seam allowances and stitch in the folds as follows:

Pull the stitches closed as you go and make sure that your stitches are uniform and the "ladder rungs" stay parallel to each other and perpendicular to the seam allowances, which should be kept even as well and not bunched up on one side or the other. Feel free to PM me if you want more info.
