Hubby came home from work today with his back out so we'll wait until sometime later this week to have corned beef (it will be on sale then too

) I boil as usual until it is fallling apart then I make a glaze with 1 cup apricot preserves, 4 T. brown sugar, and 2 T. soy sauce. After beef has cooked to my satisfaction, I place it in a shallow pan in the oven at 350 degrees and glaze & bake for another 25-30 min. The glaze is soooo good, especially on cooked carrots! Mmmm...Tonight we will probably have soup & grilled cheese sandwiches.
