I'm making corned beef and cabbage, green milk, and sugar cookies with green sprinkles.

Amy, who is not Irish, but loves any excuse for a party.

We actually celebrated yesterday because one of my boys is named Patrick & he had to go to school today. Anyhow, we don't do any of the fun cookies with green sprinkles or food coloring because his belly doesn't tolerate green food colorings.
Dh's out of town, so we ate out. Patrick got to choose & he chose BBQ. Not very Irish, but that's what he wanted.

I'm making something right now!

I'm making Irish potato cakes - a recipe from my great grandmother who grew up in a convent there. There are just two ingredients - potatoes and flour. They really are delicious, tho'.

The idea was to add the flour to day-old potatoes so that more people could be fed for less money. You bake them for up to an hour and a half, then add butter, salt & pepper. I'm not sure if back then butter was really added or not tho', 'cause that would've maybe been a luxury.

And of course we're having cabbage with it!

Hubby came home from work today with his back out so we'll wait until sometime later this week to have corned beef (it will be on sale then too ) I boil as usual until it is fallling apart then I make a glaze with 1 cup apricot preserves, 4 T. brown sugar, and 2 T. soy sauce. After beef has cooked to my satisfaction, I place it in a shallow pan in the oven at 350 degrees and glaze & bake for another 25-30 min. The glaze is soooo good, especially on cooked carrots! Mmmm...Tonight we will probably have soup & grilled cheese sandwiches.ag
