It was absolutely wonderful! Nice, cool, filling dinner on a hot, hot night!

We got the recipe from Veganchef.com Under Main Dishes.
We just cut the "noodles" in thin strips, vertically. We didnt make them thin though...left them kind of wide. But, you can do them however you like.

Last night we made an awesome bread salad. Lightly toasted chunks of crusty french bread, tomatoes, strpis of basil, olive oil, red wine vinager and salt and pepper. To die for good

Tonight is Gazpacho.

Last night was:

Feta Spinach Manicotti
Italian spiced Zucchini with carmelized onions (zucchini came from the garden)
Salad (Leaf lettuce and romaine lettuce and melbar spinach came from the garden) with grated carrot, chopped up celery, ranch dressing.

Tonight:

Barbeque baked beans
Creamy mushrooms in garlic sauce
Steamed Cauliflower

Indian red lentil soup (crockpotted it), sauteed spinach, and some supposedly easy flatbreads leavened with baking powder (I have never tried this recipe before).

Now I should stop posting about it and go finish making it.

last night i made some wierd enchilada casserole thing with black beans, yellow squash and soy cheese and it turned out too spicy and watery so i used it as filling in tortillas which i covered in tomato sauce. when its hot it tastes lovely...

tonight im planning on making that spaghetti squash my moms husband brought for me. a friend of his gardens and sends us all kinds of yummies.

We are sort of new to vegetarianism and last night I made the yummiest bean burgers with salad and homemade crisps. yuuum. My dd who wants to be a vegetarian ate most of it but I think it will take some getting used to for her to eat more foods like this. She is the most adventurous of my 3 kiddos.

How do you do spaghetti squash? I have about 4 that are almost ready to go in the garden and I love it!! I always cut the squash in half, put water in each hold and microwave it for about 10 minutes until it starts getting soft. I take it out of the microwave, fill the holes with spaghetti sauce and throw in the oven at 375 for about.....1/2 hour until it's really soft. Then just scoop it out and it's just like regular noodle spaghetti.

Eat like regular spaghetti- or- add a little butter or coconut oil and a sprinkling of brown sugar. Or a splash of coconut milk.

We split a 12 lb box of beautiful roma tomatoes from the CSA with my mom this week, so we've been eating brown rice with tempeh and tomatoes, pasta with fresh tomato sauce, tomato, romaine and avocado salad...

tonight we're having a raw tomato soup, kind of like gazpacho, but with sweet peppers, lots of basil and more italian-type seasonings.

Tonight we are having zucchini casserole made with fresh herbs and farm fresh raw goat cheese a friend made. I think we might have roasted new potatoes on the side.

reviving this thread bc i made a yummy dinner tonight! i bought a pumpkin the other day and have been thinking what to do with it~ we've been eating a fair bit of squash recently so i wanted something different. so i decided to make pumpkin custard. then i needed to think of what to eat with it, and i wanted something meaty to offset the sweetness, so i got some portabellas. i roasted them and topped them with soft goat cheese, green apples, and stuffing, and then gravy. i also made lemon kale. it was yummy! we would have had pumpkin seeds too but me and ds ate them a few days ago when we cooked the pumpkin to make puree. yum!!! i think i used 800 dishes though! dp is cleaning up .

i have been making dinner every night for the past 2 months, and its so fun to look over these threads for ideas. usually my dinners are much more simple than this!

Ok, I'll chime in with ours:

Last night was potato-corn chowder, fava beans, homemade bread, and salad.

Tonight was homemade macaroni and cheese with pumpkin seeds on top (ww noodles), salad, leftover soup, and sauteed yellow summer squash.

I'm still thinking about tomorrow night's dinner. I'd love to see other people's ideas!

Yummy!! I love the idea of pumpkin seeds on top! Tonight we're having Baby Carrot Soup with Macaroni and Cheese - I'll have to add the pumpkin seeds!

I've got a bean & cheese enchilada casserole in the cp. I was inspired by a post earlier on this page.

Actually I am hoping that I go into labor tonight because there is definatly enough to feed the whole birth team in there, but concidering it is already 4pm... I don't think it's gunna happen. Oh well! :
