Meowee burger again for my dinner tonight (hubby's first night duty and a sick DD and I'm too tired and they were in the freezer already!). Tomorrow I plan to make gentle lentil sea shepherds pie I got off these boards (sorry I can never remember who's recipes they are but thank you!!) and then twice baked taties with vegan gratin (omni one's for hub) the night after.

we ended up having apple oat pancakes sunday instead of the quesidillas. We did the quesidillas last night and they were so big and filling I am glad i decided not to make anything to go with them. I was stuffed after only half of one lol

Oooh (again! More recipes!!) Cashew cheeze recipe please : (ermm maybe I shouldn't use that smiley, I've been batting my eyelashes at you all over the board!! )

Tonight hubby wants (blech) chicken so I'm having quinoa with steamed veggies and tossing up between a creamy garlic and potato sauce, garlic sweet potato sauce or a creamy tahini sauce. Tomorrow night twice baked potato's, not sure what on them just yet.

We have almost no groceries in our house right now, but dh managed to make delicious stuffed red peppers with rice, garlic, herbs, and chick peas. Yum!

Tonight I think it's going to be mini-wellingtons (BF believes this the best recipe in Vegan Lunchbox and I have to agree), potatoes with mushroom gravy, a green veg and salad.

Then tomorrow we'll have mii-wellingtons for lunch!

Oh wow - mini-wellingtons sound awesome!! I wish I could afford another cookbook just for that recipe but I already bought two new ones this week and I'm over budget. Have to put it on my wish list.

For yesterday's dinner I made tempeh goulash from a recipe in the Vegetarian Slow Cooker, it was fantastic! So excited about that cook book, everything sounds amazing.

Last night, we had lentil-chickpea soup and whole wheat rolls (both from The Scent of Orange Blossoms). Tonight, I'm making a couple more recipes from the same book: "Thursday evening's buttery couscous" (using EB) and "winter squash with caramelized onion."

Sounds good, although I can't eat chilli or jalapeno's cause of my tummy however I'm having baked taties for dinner tonight so I'm thinking I'm going to slather them up with some of this! Lol, I have so many cheeze sauce recipes (although I'm discovering that a lot of my Uncheese recipes by Jonanne Stepanik seem to be really acidy and over oniony so looking for some alternatives)

We've been having Vegetarian Korma for the past three nights. The first two nights we also had Curry Maple Sweet Potato. Served with basmati.

It was awesome to cook once and have it for three days, just heavenly.

Tonight, we have ultimate frisbee, so it will be on the go.

I have a spaghetti squash standing by for either Fri or Sat night, we usually go out to eat one of those nights. I plan to bake it and serve it with sauce or chili.

Did you make those yourself, Hello Kitty? That sounds divine.

I'm two seconds away from making a standard "lazy night" dinner - fry-b-qued tofu, mashed potatoes, and steamed broccoli. It's my kids favourite meal.

Yum! I ADORE spaghetti squash, sadly it seems to be totally unavailable over here and I haven't had it since I was a kid My Mum used to bake it, shred it and throw on a dob of margarine (well I think she used butter) Mmmmmmm (wipes drool off keyboard and sobs at lack of Spaghetti squash in Aus).

Well, I still haven't gone grocery shopping and again DH managed to make a great meal. Frozen pumpkin gnocci with veggie sausage, peas, garlic, and tomatoes! Yum!!

isn't it a shame when you crave something elaborately delicious but have no motivation to make it?

i'm really wanting a greek feast tonight (spanakopita, roasted lemon potatoes, greek salad) but i haven't the energy. it's probably going to be a simple pea soup and biscuits.

I wish I could say yes but I'd be a liar They are from Rising Moon Organics (or something like that), they make some of the best vegan raviolis, if you've never tried them you need to! My favorite is the garlic and roasted veggie.

Or if you really want to make something great but there is a snow storm so you can't go out on the bad roads to get puff pastry to make mini wellingtons :

Pea soup and biscuits sounds pretty yummy though! Too bad I don't have the stuff to make that either... maybe potatoe and garlic soup and biscuits for me.
