Tonight is carrot soup, yam hummus from Vive le Vegan with pita and a broccoli and pepper salad with orange-oregano dressing.

Oh, and I have some blackberry sorbet kicking around for later.

Monday we had delicious tofu fajitas.
Yesterday, we ate out and shared caprese salad, butternut squash raviolis and polenta with cheese, spinach and sage.

Tonight, DS and I are eating out again with a friend. I'm thinking cheese enchiladas and black beans if we go to the Mexican choice.

Last night was fried tofu w/ broccoli n a peanut sauce over rice.

Tonight was my fav potato soup recipe from How it all vegan with cracked wheat sourdough toast smothered with earth balance accompanied with a romaine salad topped with goddess dressing.

Tonight was wheat wraps filled with grilled onions, peppers, salsa, red beans, and avocado slices. Super yummy and filling... it's been hours and I'm still pretty full.

Tonight it's veg dumplings, rice verde, and salad. A stand-by that DS loves and it's easy.

Tomorrow night is sloppy lentils and salad.

Sunday will probably be carrot soup and salad.

Nothing too exciting in any of those days, but it all is tasty.

Tonight it's Pinto Beans (adjusting this recipe) with Polenta Fries (from Vegan Lunch Box), romaine/arugula salad and some fresh fruit.

And I'm thinking real hard about making some Maple Walnut cookies from VWaV for dessert....mmmm, maple-y!

Last night I went out for a four course vegan French dinner at Veggie Planet in Boston - it was a special dinner arranged by the Boston Vegetarian Society. This was the menu:

Tartare de légumes (marinated vegetable and herb salad)

Potage aux patates douces (roasted sweet potato soup)

Chickpea and chive crêpes filled with sautéed spinach and wild
mushrooms, accompanied by a bordelaise (shallot) sauce

Assortment of petit fours for dessert

Vegan wine

It was soooooooooooooo good!!! Yummy. And it was nice not to have to cook for myself yet not to have to grill the waitstaff about ingrediants

Oh that menu sounds so good! Especially compared to my toasted veg sandwich dinner last night.

Tonight, inspired by the fave greens thread, I'm having greens and black eyed peas with rice and probably a bit of salad and a handful of nuts.

Tomorrow will likely be squash soup, or maybe pasta with marinara.

I finally made Meowee's burgers last night . They are GOOD! I didn't eat them as burgers per se (couldn't image more carbs), but instead dipped them in a sweet chile sauce. YUM!

Tonight was carmelized onion mashed potatoes with mushroom miso gravy, biscuits from VWAV and steamed broccoli and carrots.

The mashed potatoes where yummy but OMG the gravy!! I was in heaven!

The biscuits sucked. I used half WW and half white. They didn't rise at all. They were like wheat flavored hockey pucks.

I'll definitely be making the gravy again

I'm making Kurma Dasa's Chickpea cutlets with garlic and cilantro cream, some sort of grain to go with it, maybe 5 or more ingredients quinoa.

Tomorrow night lasagna leftovers. I have so many leftovers in my freezer I can't put anything else in there! Time to eat some of them me thinks (and save myself some cooking stress in the meantime lol)

We had a strange brunch with some of the in-laws this afternoon. I made up a bunch of eggplant, pepper, tomato, onion, and avocado slices and drizzled some light oil and garlic over it. I put it all in a foil pouch on the BBQ for a few minutes. It was so easy and tasty. The family was all wierded out by my food, but they sure were interested in what it was.

I had a few potato chunks too.

Odd dinner here tonight - edamame and then fresh pineapple. My tummy is revolting against the pineapple a bit... I think I wasn't "full" enough for the acidity.

Still, tasted like paradise

I'm experimenting tonight (geesh! I hope it's edible!!) I'm making baked potatoes, with seitan bacon (Joanne Stepanik, Vegan Vittles tempeh marinade), Bryanna Clark Grogan's soy free, dairy free sour cream, chopped green onions and if I get my bum in gear some grated nut cheese over the top (if not vegan parmesan sprinkles or I may cheat and use real cheese )

Mmmmm I think I may have to go back to making nutritional yeast gravy....reading all of this gravy talk. I found my old nature's burger mix, mixed with ground nuts and made nutty tacos...cooking might just get interesting again.
