Last night, we had red bean purée soup with zucchini from Vegetarian Soups for All Seasons. Tonight, we're having something with asparagus (I can't remember exactly - might be a pilaf) from Quick Fix Vegetarian. (Both books are vegan.) QFV is a new one, which I decided to try out to save me some time on weekdays, but my grocery bill went through the roof - back to everything-from-scratch mode next week.
