I've never soaked flour before and I really want to make zucchini bread. I have tons of huge zucchinis! I have a normal recipe for it here.....is it possible to translate this into a soaked ww flour recipe when the recipe doesn't call for water in the first place? I'm sure it will be too wet especially when I sub honey for the sugar as well. Has anyone done anything like this? Thanks so much for any help.
3-1/2 cup unsifted whole wheat flour
1 tbsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup firmly packed brown sugar
2 eggs
1-1/2 cups buttermilk
2 tbsp melted butter
grated rinds of 1 orange and 1 lemon
2 cup coarsely shredded zucchini
Preheat oven to 350. Grease a 9x5x3 loaf pan. Mix together flours, baking powder, soda, salt and sugar. Add remaining ingredients. Stir until well blended. Pour into loaf pan and bake for 1-1/4 hours or until firm.
