Kefir Soda recipe not working! Help PLEASE

I've been trying to make the kefir soda recipe in Eat Fat, Lose Fat to no avail : . I'm using kefir powder along with the rest of the ingredients. It's just not fizzing up like soda. I don't know what I'm doing wrong. Does my house need to be warmer? Should I use more powder? I have no clue. Any help deeply appreciated. Thank you for your time. Janel

Sometimes when I use powder, I get a dud and nothing fizzes up. Is the powder new? That's the only thing I can think of other than letting it sit longer.

Yes, the powder is new. I keep it in the fridge though. Maybe I should let it sit out before use. Thanks.
