Blueberries!

Yea! My mom, me, and the girls picked blueberries today. 23.5 lbs for my mom, 28.5 lbs for us. I am so glad to have them. My dh, me and the kids will go back next week for about that many more. They are soooo good, and we love to eat them all winter.

We've been getting raspberries out of our fence row, and some fresh cherries from up north, too. I got some super sweet watermelon at the store, so we are thoroughly enjoying our summer. The garden is really coming on, and we're getting more out of it every week. This is one of the best times of the year, I think.

I want some..hehe... Someone at church dropped off a bunch last week..we got a bunch but we ate it them all up..lol I need to find a place to go pick them.

Wow, that's quite a load of blueberries! I'm jealous! I just got some at the farmer's market yesterday and I'm making blueberry preserves with them. Try fermenting some of your blueberries! Yum!

I am not sure I want to "waste" any of my blueberries on something that may or may not turn out! I'm sure it they turned out, fermenting would be a good thing to do with them. I'm getting ready to freeze them this afternoon. Just need to go get my freezer bags from my mom (who borrowed them to freeze hers yesterday!).

Awww, I'm SOOOO jealous!!! I love fresh blueberries! My favorite way to use a lot of fresh blueberries is to make a fresh-ish pie. The way I do it is to pre-bake the crust about half done. Cook about 1/4 -1/3 of the blueberries with a little sugar, and cornstarch (lemon juice is nice too) until thick, and mix the cooked berries with the fresh. Then pour into the crust, top with an unbaked latuce crust and bake just until the top crust is done. This way the blueberries stay VERY fresh and yummy! (It's especially good toped with a little fresh whiped cream, but not quite as healthy that way, : )
Ok... so I know you didn't ask for a recipe, but I just couldn't help myself... and now I REALLY want some pie!

Thanks for the recipe. I actually just put them all in the freezer. We're going to go pick some more for the freezer next week. We eat so many berries over the winter it's crazy! But, it makes for a healthy, no sugar snack, and they are good in so many different things.

Ok a little OT but I wanted to mention that whipped cream is great to eat with berries. Berries and cream are a synergistic (sp) combination that is excellent for you. I read it somewhere in NT.

When I make whipped cream I add a bit of Stevia. I don't think that would have an effect on the benefits of the combo, though.
