okay, so I have never made stock. I want to start!!!!

If I cook a small organic free range chicken in my crock pot, cna I throw the leftovers into a stock pot the next day?
I usually like to throw rice in for the last half hour to cook in the juices, with a bit of wter and olive oil, or throw in some veggies to roast-but if I didn't, could I use the leftovers to make stock?

And am I still getting good health benefits from roasting veggies or cooking rice in the juices?thanks!

Definitely use the leftovers for stock. Throw 'em back in your crockpot, cover with water, and simmer away. I let my chicken bones/carcasses simmer in my large crockpot for 24 hours. 6 - 24 is the recommended amount of time in NT, based on simmering in a stockpot on the stove.
