Papaya is only for digesting proteins, won't help with other foods. A more all around enzyme like Enzymedica Digest Gold or Thropp's Ultra Elite would be better.
Really? re: Taco Bell? I find that very hard to believe. Are you sure he isn't just saying that's what he *wants* to eat, rather than that is what makes his stomach feel good?
In any case, immediate diarrhea is indicative of severe gut flora issues. Perhaps the stews have a lot of fiber that is just exacerbating the issues he already has. He's on a one stop track to Crohn's disease unless this is dealt with. And Taco Bell is not going to help.
Maybe he would rather hear from a guy who recovered from Crohns:

I think you should stop getting him to take stuff. He needs to find the willpower on his own and ask for your help. And with guys, maybe that means it has to be really bad unfortunately. That is the approach I'm taking with my DH who also has a junk food problem and severe bowel issues. And I'm not happy about it either let me tell you but don't know what else to do.
Cod liver oil, probiotics, and bone broths are the holy trinity. See the Gut Healing Tribe Cheat Sheet for more on fixing guts. There's a link from WAPF on nutritional requirements for digestive problems.

If he's lived on junk food for a long time, he can certainly have a problem digesting foods that are higher in animal fats (most junk food is made with vegeatable fat).
You may also want to look into "metabolic typing diet" (author Wolcott). Your husband may be a carb type, who do not do well on high fat/protein. Once you find out what balancing systems in his body are out of wack, you can determine what type of diet will bring his entire health back into balance. This is the opposite of treating symptoms/diseases with the idea of "one-size-fits-all". This is true even with a traditional based diet. The general idea is that everyone should do well on high-protein, high-fat diet, but that's not true. It mostly depends on your genetic type, but other factors must be accounted for, like illness etc. People's types also may change overtime, and when you regain health, you may go back to your true genetic type.
If your husband would test for protein type, his inability to digest heavier foods may persist for a while, perhaps due to a liver dysfunction (digesting fats require a healthy liver), but the idea is that if you eat foods that are suitable for your type, your entire body will adjust back to health.
